And the work ends overnight as the kitchen staff arrives for morning prep work. Quitting then allows the paints and vanishes to harden properly. In the event that table tops are being refinished or are getting coated (or recoated) with an epoxy pour, the section must be closed for a day or two in order to allow the finish to cure and become "fixed". There now are water borne varnishes that do not off gas the way old fashioned oil based varnishes did. The best waterborne varnishes for restaurant tables are probably waterborne floor varnishes. These are durable enough to tolerate foot traffic if allowed to cure for about 36 hours. That means doing the work overnight and then closing the section for only one day. The other common table surface is the catalyzed epoxy poor. Once cured, this finish is quite durable and retains a deep high gloss for quite some time.
Painting of a restaurant can involve some tile repair in the bathrooms and kitchen areas, as well repainting in those areas as well as the dining rooms. Almost without fail all this work is done overnight.
